Ingredients:

  • 2 cups Steam Sona Mansoor Rice (Pooja Industries)
  • 3 cups water
  • 2 tbsp oil or ghee
  • 1 bay leaf
  • 1 cinnamon stick
  • 2–3 cloves
  • 1 onion, finely sliced
  • 1 tsp ginger-garlic paste
  • 1 cup mixed vegetables (carrot, beans, peas, capsicum)
  • 1 tomato, chopped
  • 1 tsp salt (adjust to taste)
  • 1 tsp garam masala or pulao masala
  • Fresh coriander leaves for garnish

Method:

  1. Rinse the rice: Wash Steam Sona Mansoor Rice in water 2–3 times until the water runs clear. Soak for 15–20 minutes, then drain.
  2. Prepare the base: Heat oil or ghee in a heavy-bottomed pan or pressure cooker. Add bay leaf, cinnamon, and cloves. Sauté until aromatic.
  3. Add onions & masala: Add onions and sauté until golden. Add ginger-garlic paste and cook for 1 minute.
  4. Add vegetables & tomato: Stir in chopped vegetables and tomato. Cook for 3–4 minutes.
  5. Add rice & spices: Add soaked rice, salt, and garam masala. Mix gently.
  6. Add water & cook: Pour in water, cover, and cook on low flame until the rice is tender and water is absorbed (or 2 whistles if using a cooker).
  7. Fluff & serve: Gently fluff the rice with a fork and garnish with fresh coriander.
